* Step 1
Preheat oven to 200. Wash and slice the courgettes lengthwise. Dry well with kitchen paper. Mix breadcrumbs, parmesan, parsley, salt and pepper together in a bowl
* Step 2
Put courgettes on a baking tray lined with parchment paper. Sprinkle the breadcrumbs all over and drizzle with olive oil. Pop in the oven for about 20 mins
