Salmon and sweet corn cakes

I had some left overs as I have a habit of making too much mash. These were really tasty and went great with hummus. But you could serve it with salad 😊 #salmon #dinner #mainmeal

Cooking instructions

* Step 1

Mix mashed potatoes, salmon and sweet corn in a bowl

* Step 2

Add beaten egg and parsley. Mix well. Divide mixture into 4 and roll in breadcrumbs. Leave in fridge for at least an hour

* Step 3

Heat oil in a pan. Shallow fry for about 3 mins on each side until golden brown. Drain on kitchen paper

* Step 4

If making hummus, whizz up ingredients in a food processor until smooth

Serve :)
