Cooking instructions
* Step 1
Wash, slice and dry the aubergine well. Sprinkle with a little salt to draw out the water. Pat dry well with kitchen paper. Chop into centimeter cubes
* Step 2
Cook onion and chilli in a good amount of olive oil. When softened, add the aubergine and cook on medium heat for about 7-8 minutes. The aubergine will absorb the oil and the pan will go a little dry.
* Step 3
At this point, add the prawns. Cook for 2-3 mins. Check for salt. Now add the breadcrumbs and mix well for 2 mins. Now the pan should be more or less dry as also the breadcrumbs will absorb the oil. Serve with a good amount of fresh basil 😀
