Pasta fagioli
Borlotti beans are wonderful and full of goodness. This yummy soup is easy and very very tasty You can use dried beans, fresh beans, or even tined, but if using tined, reduce cooking time. #italian #pasta #soup
Cooking instructions
* Step 1
In a big pot, fry veg and chopped pancetta gently in a little oil. After 2-3 mins, add the beans. Cook for 1-2 mins then add a glug of wine. Let it evaporate
* Step 2
Add the hot stock. Simmer gently, stir occasionally for about an hour. After this time, add the pasta. Stir and cook on medium until pasta is cooked. Salt to taste
* Step 3
Looking yummy :) serve with a drizzle of oil on top and crusty bread
