Potato and courgette rosti
I make rosti every now and again but I thought I'd try them with courgette, glad I did! Really tasty. Great for breakfast, make the night before or have as a side dish #potato #breakfast #sidedish #vegetarian
Cooking instructions
* Step 1
Wash and slice courgette in half, remove the seeds with a spoon. Peel potatoes, grate using cheese grater into a bowl. Grate courgette and mix
* Step 2
Add salt, pepper and herbs, I used dried sage. Using your hands, squeeze as much water out of the mixture as possible. Heat oil and knob or two of butter in a pan. Using pastry ring, add the mixture or make one big one
* Step 3
Press down firmly using a pan lid and cook on medium turning once or twice. Serve when golden brown :)
