Apricot is in season and a classic American summertime dessert is Apricot Cobbler. Of course one can do with any fruit but Apricot came out as a magic
Ingredient

Prep time-10 mins, Baking time-50 mins
Cooking instructions
* Step 1
For Apricots - Wash and slice thin. Add in a bowl and add fresh orange juice and granulated sugar. Mix well.
* Step 2
Grease baking tin with butter and set aside
* Step 3
In a bowl add APF, baking soda, salt and mix well, set aside
* Step 4
In a different bowl add butter and whisk until soft, add granulated sugar and whisk to mix well.
* Step 5
Add vanilla essence, one egg and whisk well
* Step 6
Add the dry ingredients in three parts and keep whisking every time a part is added.
* Step 7
Pour the batter on the apricots and just press lightly. The batter will melt and bake well.
* Step 8
Add sliced almonds on the batter
* Step 9
Pre heat the MW to 180 deg C. Add the baking tin and bake 50 mins or until done
* Step 11
Take a slice and place on a serving bowl, add a scoop of vanilla ice cream and enjoy 😊
