Italian Salad with Black Rice

#GoldenApron23 Black Rice is very healthy and for lunch today I made this beautiful salad which is all good health and nutrition

Cooking instructions

* Step 1

In a wok boil water and add black rice. Cook on medium flame for 45 mins and pour cold water, drain and set aside

* Step 2

In a bowl add chopped red capsicum, chopped onions, chopped cucumber, chopped tomato, quartered green olives, chopped capers, chopped celery stick, chopped asparagus, chopped gherkins and mix. Add chopped walnuts

* Step 3

Add mild olive oil, mix and add lime juice and mix well.

* Step 4

Mix with black rice and add feta cheese(don’t add any salt as feta cheese has salt), add lemon zest and more chopped walnuts

Plate and enjoy 😊
