Gajar Halwa Ice Cream

#thc #thcweek13 Who doesn’t love ice cream and if it’s with seasonal veggies, then it’s all the more heavenly. I made with carrots and couldn’t resist to finish it all

Ingredient

Cooking instructions

* Step 1

Wash, peel and cut the carrots into roundels.

* Step 2

In a pressure cooker heat ghee, add carrots and cardamom powder and on medium flame cook for 2-3 mins

* Step 3

Add milk and put on pressure for 2 whistles on low flame. Depressurise

* Step 4

When milk comes to boil take 2-3 Tbsp of the milk and mix with saffron, set aside the saffron. Set aside

* Step 5

Use a hand blender to blend smooth. Set aside

* Step 6

Add condensed milk to the carrot purée

* Step 7

Add the saffron infused milk to the purée.

* Step 8

Cover and refrigerate to chill.

* Step 9

In a bowl whisk heavy cream until hard peaks are on. Add carrot mix and mix well

* Step 10

Pour into a air tight container and refrigerate overnight or 6 hours

* Step 11

Scoop to plate and garnish with chopped pistachios and mint leaves. Enjoy a fusion food
