A very popular dish from Thailand which is enjoyed by pan world in its variations. I made a Vegan one
Ingredient

Preparation time-10 mins, Cooking time-20 mins
Cooking instructions
* Step 1
To make a the sauce - in a bowl add Tamarind paste, soya sauce, honey, lime juice and Thai red chillies. Mix and sauce is ready
* Step 2
Soak the Rice noodles in water according to package instruction and set aside.
* Step 3
Julienne the carrots, cut the onion, cut the spring onions, cabbage, shiitake mushrooms sliced, garlic cloves minced
* Step 4
In a wok heat oil and add garlic minced and shallots, toss for 2 mins, add shiitake mushrooms and toss for 2-3 mins.
* Step 5
Add cabbage, julienned carrots, spring onions greens and noodles. Toss well, add the sauce
* Step 7
Garnish with roasted peanuts, Thai red chillies sliced and some coriander leaves chopped
