Laab means Salad from North East Thailand and Kai Jiew is Omelette. The traditional method is to make with ground meat but with eggs it tastes so good.

Cooking instructions
* Step 1
In a bowl beat eggs with oyster sauce and set aside
* Step 2
In a pan heat oil and add the egg, spread well and on medium flame make the omelette, the extra egg should be spread evenly so lift the sides for the whole egg to spread and cook. Flip the sides and cook well until golden in colour. Set aside
* Step 3
Make bite size pieces. Set aside
* Step 4
In a bowl add chopped coriander leaves, chopped mint leaves, chopped spring onion green. Add sliced cucumber and mix well
* Step 5
Add dry toasted rice powder (take 1/4 cup jasmine or basmati rice in a pan add kafir lime leaves and on medium flame cook until golden in colour. Set aside and add to a blender and blend smooth powder)
* Step 6
Mix and add red chilli flakes, add finely sliced onion, add sliced lemongrass if using, mix well
* Step 7
Add the omelette pieces and for dressing add lime juice and fish sauce and mix well
* Step 8
Plate and enjoy either on its own or with steamed rice
