Tomato & Fresh Basil Soup

#cppassport #cppitaly A classic Italian cuisine is Tomato & Fresh Basil Soup. When tomatoes are in abundance then fresh tomato used in the soup makes a big time difference compared to tinned ones

Ingredient

Preparation time-10 mins, Cooking time-30 mins
as required

Pepper powder

as per taste

Salt

3 Tbsp

olive oil

2 Tbsp

butter

1/2 cup

double cream

Cooking instructions

* Step 1

Chop tomatoes, roughly crush garlic, slice onions fine

* Step 2

In a pan heat olive oil, butter and add sliced onions and on low flame cook until translucent but now brown.

* Step 3

Add roughly crushed garlic, stock, dry white wine, stir and add sundries tomatoes paste, salt, pepper. Keep the pan half covered and bring it to boil and then simmer for 20 mins, constantly stirring so that it doesn’t burn in the bottom

* Step 4

Add basil leaves chopped and set aside. Add to the blender to blend smooth

* Step 5

Sieve (strainer) and add to a fresh pan.

* Step 6

Bring it to boil and add double cream, stir and set aside

* Step 7

Serve immediately with fresh basil leaves
