I love Ramen noodles and combining to a soup to make this Chinese dish is heavenly

Cooking instructions
* Step 1
Clean and devein the shrimps, cut the mushrooms into slices, cut the spring onion bulbs, julienne the carrots, chop the ginger, mince the garlic
* Step 2
In a pan heat oil, add chopped gingers, minced garlic, red chillies, spring onion bulbs sliced and sauté until little brown in colour, add mushrooms and little salt
* Step 3
Cook mushrooms until moisture is released. Add vinegar, soya sauce, and sweet red chilli sauce, stir. Add few julienned carrots, stir
* Step 4
Add stock, add noodles and the ramen noodle packet, stir, add spring onion greens chopped little, stir, set aside
* Step 5
Plate with halved boiled eggs, carrot julienned, spring onion green chopped, drizzle soya sauce on the boiled eggs, serve
