Nachos with Mexican Rice

#boxweek10 A fusion food to enjoy Nachos, I cooked Mexican Rice with available Indian ingredients and enjoyed Nachos

Ingredient

Food ration :

Cooking time :

Preparation time-10 mins, Cooking time-45 mins
1/2 cup

Maize flour

1/4 cup

Maida

1/2 cup

Wheat flour

1 tsp

vinegar

as per taste

Salt

as required

Oil to fry

1 Tbsp

olive oil

Cooking instructions

* Step 1

For Nachos - in a bowl add Maize flour, wheat flour, Maida, ginger-garlic paste water, vinegar, salt and mix. Add adequate water to make a semi hard dough. Rest aside for 15 mins covered

* Step 2

Roll out with a rolling pin as thin as possible and in a tawa roast for 1 min each side. Set aside. Cut into 2” strips and place all strips together and then cut triangles. Set aside

* Step 3

In a karai heat oil and deep fry the Nachos 2 mins each side. Set aside after batches are complete and sprinkle red chilli powder. Nachos are ready

* Step 4

For Mexican Rice - in a blender add tomato, garlic, onion, cumin powder, red chilli powder, turmeric powder, chicken stock and blend a smooth paste. Set aside

* Step 5

In a pan heat olive oil and add the rice. Roast until golden in colour. Add the tomato paste and add the green chilli slit. Cover to cook for 25 mins on low flame.

* Step 6

Once done, check if rice is cooked and set aside. Keep covered for another 10 mins.

* Step 7

Plate with Mexican Rice and Nachos and enjoy a fusion food
