Teriyaki Chicken

Teriyaki Chicken

#boxweek9 My love for Japanese cuisine is immense and during my many visits to Japan I enjoyed most Teriyaki Chicken amongst other kind of food.

Ingredient

Food ration :

2 people

Cooking time :

Preparation time-15 mins, Cooking time-45 mins
1/4 cup

sugar

1/2 cup

Soya sauce

1 Tbsp

Canola Oil

3 Tbsp

sesame oil

Cooking instructions

* Step 1

Substitute for Mirin - in a wok add 1/2 cup water, 1/2 cup sugar and on medium flame cook but don’t stir to melt the sugar. The sugar will melt. Set aside and cool for 3-4 mins, add 4 tsp Rice Vinegar and mix. Mirin substitute is ready

* Step 2

To make Teriyaki Sauce - in a wok add soya sauce, substitute for Mirin, sugar and mix well. Take 1/2 cup of the sauce and add chicken pieces and mix well and set aside. Cover with a cling film and refrigerate for 30 mins

* Step 3

In a wok heat Canola oil and add chopped carrots, chopped onions, chopped red capsicum and cook for 2-3 mins until softened. Add salt. Add broccoli and cook for 5-6 mins. Set aside

* Step 4

In the same wok heat 2 Tbsp sesame oil and add chopped ginger and garlic. Cook until the raw smell leaves. Add rice and stir well for 2-3 mins.

* Step 5

In the wok set aside the rice and add beaten eggs and keep stirring to cook. Allow to set for 1 min. Mix the rice and egg together. Add the cooker vegetable and stir once. Add salt and 1/2 of the Teriyaki Sauce and stir well. Set aside

* Step 6

In a wok heat 1 Tbsp Sesame oil and add chicken and add the rest of the Teriyaki Sauce. Cook on low flame until thickened. Sprinkle some sesame seed and set aside

* Step 7

To plate I greased a Bundt cake pan. Added the rice and cooked vegetables and pressed with a back of the spoon. Reversed on a board and added the cooked chicken into it. Garnished with coriander
