Cold Mango Soufflé

#mania Mango mania in me made me do a soufflé but a cold one and what a great way to use mango

Ingredient

Food ration :

Cooking time :

Preparation time-10 mins, Cooking time-24hrs
1/4 cup

castor sugar

1 Tbsp

gelatin

Cooking instructions

* Step 1

Break the egg yolk and egg white in two separate bowls.

* Step 2

In the double boiler method add the egg yolk to a glass bowl and add castor sugar and vanilla essence and whisk until pale yellow in color. Add gelatin into it and whisk and then set aside.

* Step 3

To the egg white beat until soft peaks visible. Add mango purée and mix well.

* Step 4

Add egg yolk mixture to egg white -mango purée mix and fold well. Add whipped cream to it and fold gently.

* Step 5

Put in ramekins and refrigerate for 24 hrs.

* Step 6

Add mango slices and mint leaves and enjoy
