Tomato Rice

#boxweek6 Tomato Rice is one of my favorite one-pot meals. Easy to cook and my any day food. Just a few ingredients and a wholesome meal is ready

Ingredient

Food ration :

2 people

Cooking time :

Preparation Time-10 mins, Cooking Time-20 mins
3-4 medium sized

tomatoes chopped fine

Few sprigs

curry leaves

as requried

Ghee

as per taste

Salt

For

Powder

1 tsp

Chana Dal

For Garnishing

Curry leaves

Cooking instructions

* Step 1

Take two separate pans. On one add all ingredients under Powder and roast for 3-4 mins until an aroma is there. Set aside to cool and make a powder by adding to a blender. Set aside for later use

* Step 2

In another pan add ghee, add mustard seeds, 1 sprig of curry leaves, once it splutters add chopped tomatoes. Cook on low flame until mushy

* Step 3

Add rice and switch off the flame. Mix the rice well, add half of the Powder and mix well, add salt and mix well.

* Step 4

Plate and garnish with curry leaves. Retain the powder for further use or sprinkle on top again.
