Tofu on Green Dip

#boxweek3 Tofu is such a universal ingredient that can be used as an appetiser, a healthy main course and variations are endless. I chose to make an appetiser with a Green dip. It’s a vegan dish

Ingredient

Food ration :

Preparation time -5 mins, Cooking time-10 mins

Cooking instructions

* Step 1

Discard the water from the Tofu and cut some parts into 1” cubes and some into 2 long strips. Set aside

* Step 2

For the Green dip - in a pan heat ghee, add coriander leaves, mint leaves, green chillies and cashew nuts and roast for 3-4 mins. Set aside to cool

* Step 3

Add the roasted cashew nuts and greens into the blender and add 1/4 cup water to make a smooth paste. Set aside

* Step 4

Plating - on a plate add the Dip, brush down and place the long cut Tofu’s. Arrange the 1” cut Tofu’s and place edible flowers and some micro greens. Enjoy a healthy appetiser
