Minestrone Soup

Minestrone Soup is a very Italian Soup and I included beans and potatoes which are Northern & Southern part of Italy use. In North part of Italy people from Veneto uses Beans and in South Italy people from Basilicata uses Potato. I chose to make a vegetarian one

Cooking instructions
* Step 1
Soak Beans overnight and boil on low flame for 1 hr depending on the quality of beans with a bay leaf and 1/2 tsp baking soda. Remove the bay leaf. Strain, wash with cold water, strain and set aside.
* Step 3
In a wok heat olive oil and add leek, onion, carrots and sauté until leek & onion are softened.
* Step 4
Add vegetable stock, Parmesan rind and on low flame cook covered for 10 mins.
* Step 5
Add cubed potatoes and beans. Remove the Parmesan rind. Add salt and pepper powder. Cover and cook for 20-30 mins. Add chopped parsley leaves at this time
* Step 6
Set aside. Add to a serving bowl and add lot of grated Parmesan cheese and 1 Tbsp olive oil.
