Egg poach on Red beans

1/2 cup

Rajma

1 tsp

paprika

1 Tbsp

vinegar

1 Tbsp

olive oil

Cooking instructions

* Step 1

Cooking beans - Soak the Rajma overnight or 4 hours and in pressure cooker on 4 whistles cook. Strain and set aside.

* Step 2

Make tomato purée - cut the head of tomatoes in 4 skits, boil and peel the skin after cooling. In a blender add the tomatoes, a little vinegar and blend to make a purée. Set aside.

* Step 3

In a pan heat olive oil and add garlic. Sauté and add beans. Stir and add tomato purée, vegetable stock, paprika and salt. Stir very well. When the consistency is semi thick. Set aside

* Step 4

In a pan heat olive oil and break the egg to make a poach. Keep it sunny side up. Set aside.

* Step 5

For plating mash the avocado, place the beans, add the poached egg on it and garnish with cherry tomatoes and coriander leaves. Enjoy!
