Chilli Mushroom Soup

Chilli Mushroom Soup

#flavour4 This was my lunch and I loved it. Lot of chilli and I love mushroom a lot.

Ingredient

Cooking time :

Preparation time-10 mins, Cooking time-20 mins

Galangal

1 Tbsp

Cooking instructions

* Step 1

For the Chilli paste - In a wok heat oil and add garlic, whole red chillies, shallots and galangal. Fry for 4-5 mins and cool, make a paste and set aside.

* Step 2

For the Soup - Heat oil in a wok and add mushrooms and fry for 1 min. Set aside.

* Step 3

In the same wok add vegetable stock and bring it to boil. Add salt, julienne ginger and sautéed mushrooms. Stir in chilli paste and simmer for 5 mins.

* Step 4

Sprinkle fresh coriander leaves and spring onion greens and serve hot.
