Minestrone Soup
This simple Italian soup is loaded with hearty vegetables and pasta in a tomato broth. This homemade version is easy to whip up and a great way to get the family to eat all the veggies. You can serve this with garden focaccia bread. This is a meal by itself. I personally love soups over cheesy foods. This cozy soup recipe calls for a variety of vegetables, that are easily available nowadays. This can be customized with the vegetables of your choice. Here is my way of making it. #cppassport #cppitaly

Cooking instructions
* Step 1
Parboil the vegetables like corn, beans, and carrots. Sieve them and keep them aside. In a deep pot, add oil, garlic, zucchini, and bell pepper. Saute, add in the tomato puree and cook. Add the vegetable stock and add salt, pepper, rest of the vegetables, sugar, and tobasco sauce. Add in the tomato sauce and boiled pasta.
* Step 2
After it has boiled properly, check the seasoning. Add in the cornflour mixture and continuously stir till you get thick consistency soup. Sprinkle oregano, dried basil, fresh parsley.

Now enjoy this soup with focaccia garden bread A meal by itself.!!

Notes:
You can use either homemade tomato puree or store-bought. For the homemade puree, simply boil the tomatoes, as mentioned in my red pasta sauce. Peel them, and churn them in mixi jar, with few garlic cloves, half tsp sugar, and little water to get a thick creamy texture.
