Burnt garlic fried rice & stir fried veggies in hot garlic sauce

Hmmm A long title to write but finished in no time!! When I made this I never thought it would taste so yumm that all in the family would appreciate so much.The fact is that they loved all the flavours and gave a thumbs up !! All thanks to cookpad that we are trying new recipes and learning so much!! This is an indo Chinese recipe very popular & found in many restaurants. It is always served with some gravy either manchurian or this hot garlic sauce (which is a finger licking sauce) . I chose the hot garlic sauce and it teamed up so well with my Fried Rice that together they won!! Yes they won the hearts of my family and now this dish has been added in my "Frequently Made Dishes List" #boxweek12 #sangitakalra

Cooking instructions

* Step 1

Finely chop all the vegetables- ginger,garlic in advance and boil the corns. Boil the rice to aldante and cool it. If this part is done in advance then to prepare fried rice becomes very easy.In a wok or a kadai,add oil heat on high,add chopped garlic toss fry them till golden brown, remember not to blacken them. Remove a few of them for garnish. Add in chopped dried red chillies,ginger,all vegees, onions and toss.

Now add in salt to the veggies add little water (a tbsp) add soya sauce, vinegar,add rice,pepper. Now toss all together. Remember after adding rice do not toss too much else the rice grain would break. Add the greens of the spring onions ang garnish with reserved fried garlic, some coriander & burnt garlic. Serve fried rice with hot gravy.

* Step 3

For gravy, churn the soaked red chillies to a fine paste.Keep aside. Heat oil on high flame,add vegetables and stir fry. Do not over cook them. Transfer them to a plate. Now add a little more oil add chopped garlic, ginger,chilli paste, toss.Add spring onions whites. Next, In a bowl mix soya sauce, vinegar, chilli paste and brown sugar.Keep aside.

* Step 4

Add in the StirFried veggies and toss.Now add the Soya sauce mixture, add two to three cups of water like a gravy,add salt, pepper, then add the cornflour mixture, cook for two more minutes. You will see that the gravy has thickened. Turn off the flame. Garnish with spring onions greens and few coriander leaves. Serve hot with fried rice!!

Notes : 1)Preparations in advance is mandatory while cooking Chinese food. All the vegetables sholud be finely chopped in advance,sauces kept ready. As chinese food is cooked on high flame and served hot. Vegetables are not over cooked. 2) You can easily customize the sauce your own way can reduce or increase the quantity of chilli sauce.
