Lemon Penne Pasta with Shrimp πŸ‹

This Easy Lemon Ricotta Penne Pasta with Shrimp is a perfect weeknight meal that comes together in under 30 minutes. Ingredient

1 cup

ricotta

1/4 cup

olive oil

1 tsp

salt

1/2 tsp

pepper

1/4 cup

pasta water

3 tbs

butter

Cooking instructions

* Step 1

In a medium mixing bowl combine ricotta, seasonings, lemon juice, lemon zest, and olive oil. Stir until well combined

* Step 2

In a medium pan add butter and shallots and SautΓ© until translucent in appearance. Add in shrimp (if not pre-cooked. If pre-cooked add at the very end.) and cook for 1-2 minutes. Remove from heat and set aside.

* Step 3

Drain cooked penne pasta. Setting aside 1/4 cup of pasta water. Immediately add pasta back to pot and stir in ricotta lemon mixture along with the pasta water. Add in shrimp. Stir on low heat until sauce and pasta are heated through and well combined. Serve immediately.
