Healthy Zucchini fritters

Proud to consume these organic veggies grown by my daughter 😊

Ingredient

Cooking time :

20 minutes
2 cups

Zucchini

as per taste

Salt

1 teaspoon

spice mix

1 teaspoon

Carrom seeds

1 teaspoon

dry mango powder

1/4-1/2 cup

Chickpea flour

2-3 tablespoons

Rice Flour

2-3 tablespoons

Oil

Cooking instructions

* Step 1

Grate the zucchini and squeeze them lightly to take away the extra moisture (*do not throw this water. Drink it or use it in soup or curries) Chop the prei or spring onions.

Add salt, spice, ginger garlic paste,Carrom seeds, amchur powder and mix well.

* Step 3

Add chickpea flour and rice flour and form into a dough like thick batter. Take a spoonful of the batter on your palm and form into a fritter or patty shape

Heat a pan. Add oil and now place all the patties. Cook from both the sides until golden brown.

Remove on a Plate and serve hot with a dip or ketchup 😋
