Eggless Apple cake

#boxweek14 #apple #fruits This is an apple cake made using whole wheat flour and jaggery. Also this is an eggless version wherein egg is replacemed by flax seeds that are rich fiber source and super healthy for the gut. So relax and enjoy this guilt free dessert.

Ingredient

Cooking time :

35 minutes
2 teaspoons

baking powder

1/2 teaspoon

baking soda

2 Tablespoons

flax seeds(powdered)

5 tablespoons

water

1/2 cup

brown sugar

1 teaspoon

vanilla extract

1 tablespoon

lemon juice

Cooking instructions

* Step 1

Sieve together whole wheat flour, baking powder and baking soda and keep aside.

* Step 2

In another vessel mix together flax seed powder and water and whisk properly. Add sugar, jaggery, milk, oil and mix well till the jaggery and sugar is melted.

Now add the dry ingredients to wet ingredients and mix with a spatula. Don't over mix. Add vanilla extract and apple cubes and give a mix.

Pour the batter in a baking tray lined with baking paper or that is well greased with oil or butter.

* Step 5

Preheat the oven at @160 degrees Celsius.

* Step 6

Now add the lime juice to the apple slices and coat well. Place the apple slices on the cake batter and sprinkle 1 tablespoon Brown sugar all over the apple slices.

Bake for 30 minutes and insert a clean knife to check if the cake is well baked from inside.

* Step 8

Note: All the ingredients like milk, water should be at room temperature. Flax seeds can be replaced by 2 eggs for this recipe Whole wheat can be replaced by maida or All-purpose flour with the same quantity Brown sugar and jaggery can be replaced with normal white sugar. *Please note that this cake is a bit dense unlike the maida spongy cake as we are using whole wheat flour and jaggery here.
