Squid ink pasta with calamari

Squid ink pasta with calamari

I love seafood so I created this dish for a Friday night dinner with my husband

Cooking instructions

* Step 1

Cook the pasta in salted water according to directions. Reserve 1 cup of the water where you cook the pasta

* Step 2

Open the squids cans and in a deep pan, add their oil with the ink, set the squids aside,plus de 2 tbsp of olive oil and sautee the onion, garlic and bay leaves until fragrant.

* Step 3

Mix well the marinara, ricotta cheese and the pasta water and keep aside

* Step 4

When the onion mix is ready, add the calamari and wine, stir constantly until wine evaporates to half

* Step 5

Add the pasta to the calamari mixture, stir and add the marinara mix. Let it simmer for 5 minutes, salt pepper to taste

* Step 6

Put it in a plate, sprinkle w pecorino o parmesan and garnish with the basil leaves in top.
