Spanish Rice & Chicken
A quick and easy delicious meal to make for you and your family. You can substitute any seasonings to your liking, it’s all about the technique😉
Cooking instructions
* Step 1
Heat 3/4 cup of oil in a pan and add chicken seasoned with first 3 dry ingredients listed in the recipe.
* Step 2
After about 5 minutes turn your chicken to crisp the other side. Watch & rearrange your chicken to ensure it cooks evenly, then set aside for later use.
* Step 3
Heat 1/4 cup of the same oil to make the rice. Add onion, bell pepper, garlic, ginger
* Step 4
Sauté veggies until soft and fragrant (about 3 minutes). Add tomato paste & remaining dry ingredients & sauté for an additional 5 minutes.
* Step 5
Add dry rice to the pan and toast for about 2 minutes. Then add enough cold water to cover the rice & bring to a boil
* Step 6
You can continue making it in the same pan or use the oven like I did. Preheat oven to 350 and combine rice and chicken in a baking pan.
* Step 7
Cover the pan with foil and place in the middle rack for 25 minutes. Add about 10 more minutes to cooking time if you leave it uncovered in the oven. Enjoy😊
