Fry eggplant with rice and black beans

This delicious recipe is originally from my country Dominican Republic. They love eggplant dishes. I hope you try it, you will love it.

Ingredient

1/2 tsp

corn starch

Cooking instructions

* Step 1

Cut the eggplant in slices, add some salt and let it rest for about 15 minutes.

After 15 minutes wash with abundant water and dry with a paper towel.

In a bowl mix the eggs, ground black pepper, corn starch and slat and put inside of the mix the slices of eggplant. Make sure the eggplant are very wed of eggs mix for both sides.

* Step 4

Put around a 3/4 of cup of oil in a pan in a medium hight heat, when the oil is hot start adding the eggplant to fry. Make sure get brown for both sides.

* Step 5

When is cooked and brown in both sides then you take out of the pan and put in a plate with paper towel to dry the excess of oil.

Your fry eggplant are ready for eat with your favorite side. In my case i love to accompanying with rice and avocado.
