Baked Quail Breasts on Bed of Rice and Broccoli
I live in South Texas and quail is such a delicacy!! We hunt them annually and they are so delicious! My family loves this recipe. It is not a heavy meal! It is light and mouth watering!! I hope you enjoy!!

Cooking instructions
* Step 1
Very important!! Soak quail breasts in a bowl of milk for 24 hours in the refrigerator to tenderize.
* Step 2
After 24 hours of soaking breasts remove from refrigerator and remove breasts from bowl and place them on a paper towel and pat them dry.
* Step 3
Once they are dry. Lightly rub down each breast with olive oil and sprinkle with your favorite seasoning.
* Step 4
Then wrap each breast with bacon and set aside.
* Step 5
In a baking dish - place 1 cup of dry rice and frozen broccoli and spread out evenly.
* Step 6
In a small bowl - mix together the 1 can of Cream of mushroom soup and 1 1/4 cups of water.
* Step 7
Now to bring it all together! Pour the soup and water mixture over the dry rice and frozen broccoli then place the quail breasts on top of the rice and broccoli.
* Step 8
Do not cover while cooking!!
