Garam Masala pumpkin chutney
This has been a success as a Christmas present...even though some went to friends as late as March 2021 due to lockdown restrictions. #ChristmasGift

Cooking instructions
* Step 1
Dice the pumpkin finely sprinkle with salt and rest overnight
* Step 2
Rinse pumpkin to remove excess salt
* Step 3
Place vinegar and spices in a stainless steel pan and bring to the boil quickly. Cover and leave spices to infuse
* Step 4
Peel oranges and lemons and cut in segments. Remove as much pith as you can
* Step 5
Add rinsed pumpkin sugar and drained spiced vinegar to non reactive pan with citrus fruit
* Step 6
Bring to the boil over moderate heat and add 225g of dried cranberries.
* Step 7
Simmer until most of the liquid has been absorbed and it has chutney consistency.
* Step 8
Bottle in sterilised jars and seal
