Coffee flavoured dark marmalade

Coffee flavoured dark marmalade

I remembered how when I first discovered bitter orange marmalade I used to love it with a cup of coffee and I have decided to experiment blending both flavours.

Ingredient

Food ration :

8 servings

Cooking time :

240 mins
2 1/4 litres

water

250 grams

muscovado sugar

550 grams

demerara sugar

Cooking instructions

* Step 1

Peel fruits so that you don't get too much pith on the peels

* Step 2

Juice fruit and add juice to the peel which will be minced to your preference.

Reserve chopped peel and juice in maslim pan

* Step 4

Make a bundle with pips and pith of the juiced fruit and a muslin cloth. Add to the preserving pan

Add water to the pan and stand overnight

* Step 6

Bring to the boil and simmer gently until peel soft and contents about halved.

* Step 7

Add sugar and stir until dissolved

Boil to set

* Step 9

Add 1 tablespoonful of coffee extract at the point of setting and remove from hob.

* Step 10

Pot and seal in sterilised jars.

* Step 11

Heat treat in a water bath for 30 minutes at 85 C
