Grilled Chicken and Vegetable Soup

This is a quick and simple soup that my girls love. For added flavour, marinate the chicken breast before grilling. You can substitute pasta or rice for the potato and change up the vegetables if you would like something different as well.

Cooking instructions

* Step 1

Saute onion and garlic in olive oil in a large saucepan.

* Step 2

Add basil, oregano and chicken broth and bring to a boil.

* Step 3

Add tomatoes, potatoes, carrots, celery and chicken breast. Lower heat and simmer for 10 minutes.

* Step 4

Add green beans and simmer for another 5 minutes or until vegetables are tender.

* Step 5

Serve and enjoy!
