Prime Rib - Reverse Sear Method

Cooking instructions

* Step 1

Apply kosher salt & pepper to roast the night before.  Set it uncovered with the fat side up in the fridge overnight. Remove from fridge ~ 2 hrs before cooking.

* Step 2

Mix rosemary, thyme, ground black pepper and softened butter together. Spread over entire roast. Place in foil lined pan on a rack on top of aromatics.

* Step 3

Cook at 275° for 20-25 minutes/lb.  Want it to be medium rare when done (internal temp 130-134°).  Take it out ~ 120° internal temp, cover with foil and let sit for 15-20 minutes. Will continue cooking.

* Step 4

Place pan juices in cup.  Add remaining beef stock to make 1c.  Add second cup beef stock and 1c wine.  Pour in sauce pan over medium high until reduced to half. Remove from heat.  Add 2Tbs butter, salt and pepper to taste.

* Step 5

Check internal temp again.  Heat oven to 500°.  Sear roast just before serving ~ 10 minutes
