Cooking instructions

* Step 1

For Yorkshire pudding:

* Step 2

Add the milk in stages, stirring to a silky, lump free batter. (You may not need all the milk and stop when it has the consistency of double cream). Stir in the thyme, then set aside to rest in the fridge for at least 30 minutes to 24 hours.

* Step 3

Heat the oil on a frying pan over a medium heat.Add the sausages and brown all over for 3-4 minutes. Remove from the pan.

* Step 4

Add the lard or beef fat and place over a high heat on the hop. Once the fat is really hot add browned sausages.

* Step 5

Pour the batter around the over them, then quickly transfer to the the hot oven. Roast for 25 - 30 minutes until golden and puffed up.

Meanwhile make the onion gravy:

Stir in the flour and cook for 2 minutes, then gradually add the beef stock, stirring. Bubble for 2 minutes, then add the Worcestershire sauce and season if necessary.

* Step 8

Serve the toad in the hole with the onion gravy and steamed broccoli.
