Slow Cooker Creamy Chicken and Wild Rice Soup
I found this recipe on the internet and it’s been a family favorite ever since we tried it.
I normally double this recipe which just about fills it to the top. I also like to use crockpot liners for easier cleanup.
Cooking instructions
* Step 1
Combine broth, water, carrots, celery, chicken and rice along with the seasoning packet in a large slow cooker. (I leave the chicken in bigger pieces so they are easy to find and fish out later.)
Cook on low for 6 hours or high for 4 hours.
* Step 2
Once done, take chicken out and shred, then place back into crockpot.
* Step 3
In a small bowl combine, salt, pepper and flour.
* Step 4
In a medium sized saucepan over medium heat, melt the butter.
* Step 5
Once butter is melted, stir in flour mixture by tablespoon to form a roux.
* Step 6
Whisk in cream a little at a time, until fully incorporated and smooth.
* Step 7
Stir cream mixture into crockpot, and then let it cook on low for 15 more minutes.
