Pineapple fried rice with mixed vegetable raita

Pineapple fried rice with mixed vegetable raita

Cooking instructions

* Step 1

For Pineapple fried rice :

* Step 2

Heat oil in a wok/kadai. Add chopped pineapple. Cook it on high for 3-4 min. Keep on stirring after intervals.

* Step 3

Add capsicum, mix it and cook it on high for 3-4 min. Now add garlic, green chilli and onion. Mix well. Cook on high till light brown. Now add raisins and cashewnuts. Mix well. Cook on high for 3-4 min. Add salt, red chilli powder and black pepper powder. Mix well on slow flame. Add soya sauce. Mix well.

* Step 4

Add water and again mix well on slow flame. Add boiled rice. Mix very well so that the rice gets well coated with pineapple mixture.

* Step 5

Add lemon juice, mix well. Add coriander leaves and mix well. Transfer to a serving plate. Serve hot with raita.

* Step 6

Method for Raita :

* Step 7

Take a bowl. Add curd and whisk properly, so that no lumps should remain. It should be smooth. Now add in all the given ingredients and mix well.

* Step 8

Transfer it to a serving bowl. Cover it and keep it in fridge for 1/2 hr. Serve with rice, pulav, biryani or the way you like it.
