Muffin Pan Frittatas

Cooking instructions

* Step 1

Preheat oven to 350°F. Coat 12 muffin cups with cooking spray.

* Step 2

In small skillet, heat oil. Cook and stir asparagus, green peppers and onions until softened.

* Step 3

In med. bowl, whisk eggs, cream, salt and pepper. Stir in cooked veggies and cheese. Pour 1/4 c of mixture into each muffin cup.

* Step 4

Bake until frittatas are set in the middle and lightly browned, about 20 min.
