Slow Cooked Pork Stew

Tender pork, almost melt-in-your-mouth, tasty stew, it made a great meal for a healthy and comfort food dinner.

Cooking instructions

* Step 1

Seasoning flour with salt and pepper in the mixing bowl, then toss pork cubes into seasoned flour to coat evenly.

* Step 2

In a large pot or casserole pot, heat olive oil over medium-high heat, place the pork into pot, sauté all sides until the meat browned, removed browned meat to the plate, set aside.

Added bacon into the same pot, stirred frequently until bacon crispy, transfer into a plate, set aside.

Reduced the heat to medium, place onion, garlic sauté for 2 minutes, aded celery sauté until soft.

Place meat back to the pot, added carrots, potatoes, chicken stock, tomato puree, apple sauce, worcestershire sauce, light soy sauce, bay leaves and thyme, stirred, bring to boil for a couples minutes, then reduce to low heat, simmer, covered for 1 hr 45 minutes, stirring occasionally to prevent sticking.

Tips: if it has exceeded cooking oil floats on the top, spoon off any grease before stirring.

In the last 45 minutes, added fried mushrooms and crispy bacon into the pot, stir.

Taste before serving, feel free to add salt and pepper as desired, garnish with parsley and enjoy!
