Chinese Style One Pot Chicken Stew

One-pot meals are famous all over the world and every country has its own style of cooking. I love Chinese-style one-pot Chicken Stew. It’s healthy, easy to cook, and tastes delicious.

Cooking instructions
* Step 1
For Marination - wash the chicken and cube into 2” size, put in a bowl, and add sesame oil, light soya sauce, white pepper powder, and cornflour and mix well. Refrigerate for 1 hour.
* Step 2
For the stew - in a pan smear sesame oil and add ginger, just stir for 1-2 mins, add spring onion bulbs, sliced onions, and marinated chicken. Just cook until chicken is coated a little but not brown.
* Step 3
Add carrots, green capsicum, chopped mushrooms and cook for 2-3 mins, add stock and cover to cook on low flame for 8-10 mins.
* Step 4
Lift the cover and add sesame oil, light soya sauce, and increase the flame to high.
* Step 5
Reduce the stock level to your desired consistency and add cornflour slurry and keep stirring while adding so that the consistency becomes thick to your liking.
* Step 6
Add white pepper powder and stir.
* Step 7
Set aside and drizzle with sesame oil.
* Step 8
Garnish with chopped coriander and enjoy a healthy stew with rice.
