Cooking instructions
* Step 1
Boil the eggs well and let them cool before your deshell them
* Step 2
Prick the eggs gently so that the spices can enter the within
* Step 3
Marinate the eggs in a bowl with a dash of salt and turmeric for 15 minutes
* Step 4
Heat oil and shallow fry the eggs carefully on low heat until a light brown coating is seen
* Step 5
Take the eggs off heat and keep aside
* Step 6
Now temper the same oil with Bay leaf, chilli and cumin seeds
* Step 7
Once the seeds splutter, add and sauté the onions till translucent
* Step 8
Meanwhile create the slurry with the mentioned ingredients
* Step 9
Add the slurry in the wok once the onions are done and cook covered till oil is separated
* Step 10
Once done, add the tomato and cook covered with a dash of water till they turn mushy
* Step 11
Once he tomatoes are almost done, add the potatoes and salt
* Step 12
Cook covered further for 3-4 minutes
* Step 13
Add the eggs now and some water to cook the gravy to desired consistency
* Step 14
Once done, check if the potatoes are well cooked and add the sugar and garam masala powders
* Step 15
Mix well and take off heat

Serve while warm with rice, flat breads. Enjoy!
