Veg Thukpa

A north East Indian and Nepali soup recipe. Excellent for winters.A non vegetarian version with pork/chicken can also be made.The choice of vegetables are completely upto you

Ingredient

Food ration :

Water

to taste

Salt

1 tablespoon

soy sauce

1 tablespoon

Chilli sauce

Cooking instructions

* Step 1

Heat oil in a saucepan and sauté the grated ginger for 1/2 a minute on medium heat

* Step 2

Add the chopped vegetables and sauté for 3-5 minutes

* Step 3

Add salt to taste, black pepper powder, soy sauce and mix well

* Step 4

Add at least 2 cups of water and bring it to boil

* Step 5

Reduce heat and cook covered until vegetables are half done

* Step 6

Add the noodles and mix well and let the soup simmer covered until the noodles and veggies soften.

* Step 7

Transfer to serving bowls and garnish with grated radish and chilli sauce
