Schezwan Egg Fried Rice

Cooking instructions
* Step 1
Firstly, assemble all the required ingredients. Cook the rice and set it aside to cool. Wash and chop the veggies.
* Step 2
Break the eggs in a bowl. Add salt, black pepper powder and mexican seasoning and whisk it. Heat a tablespoon of oil in a pan on medium flame. Add the whisked eggs and scramble fry it. Transfer to a plate and set it aside.
* Step 3
Heat 2 tablespoon of oil in a kadai over medium-high flame. Once the oil is hot, add the chopped garlic, green chillies and onions and saute until the onions turn slightly golden brown.
* Step 4
Add the chopped carrot, red and yellow bell peppers and spring onions and saute for a minute or two. Do not overcook the veggies.
* Step 5
Add the black pepper powder and salt and saute for few seconds.
* Step 6
Now add the cooked and cooled rice and two tablespoon schezwan sauce and toss it well to coat the rice with the sauce.
* Step 7
Add the scrambled eggs and mix it well.
* Step 8
Check for salt and spice. Add a tablespoon of schezwan sauce and mix it well. Adjust the sauce as per taste.
* Step 9
Flavorful and Delicious Schezwan Egg Fried Rice is ready. Serve it hot.
