Cooking instructions
* Step 1
Firstly, assemble all the required ingredients.
* Step 3
Heat coconut oil in a deep pan. Add mustard seeds and allow it to crackle. Add fenugreek seeds and saute till it changes color. Add cumin seeds, urad dal and roasted chana dal and saute it well.
* Step 4
Add the broken dried red chillies and curry leaves and saute it well.
* Step 5
Add the snake gourd cubes and saute it for a minute.
* Step 6
Then add turmeric powder and salt. Saute it for a minute.
* Step 7
Cover and cook on low-medium flame for 8-10 minutes.
* Step 8
Add grated ginger and crushed green chillies and saute it for a minute or two. (You can make a paste of ginger and green chillies). Remove from flame and allow it to cool completely.
* Step 9
In a large mixing bowl, whisk the yogurt. Add the cooked and cooled snake gourd and mix it well.
* Step 10
Add the finely chopped onions and mix it well.
* Step 11
Healthy and Delicious Snake Gourd Kadhi is ready. Serve it with rotis or hot steamed rice.
