Cooking instructions
* Step 1
Firstly, hard boiled the eggs. Allow it to cool. De-shell them and cut into halves, lengthwise. In a small bowl, beat two eggs and set it aside. Keep the breadcrumbs ready in a bowl/plate.
* Step 2
To prepare the spicy potato mixture firstly clean and cook the potatoes in a steamer. Once cooked and cooled a bit, peel and mash them well. Heat oil in a pan. Add cumin seeds and asafoetida and allow it to sizzle for few seconds. Add the chopped onions, curry leaves and green chillies and saute till the onions become translucent.
* Step 3
Add the ginger garlic paste and saute till the raw smell goes off. Add salt and the above-mentioned powdered masala and saute for few seconds. Add the chopped carrot.
* Step 4
Also add the chopped chicken salami which was slightly fried with a dash of butter or oil. Add the chopped egg whites of two eggs. You may include the egg yolks too, if you want. Saute for few minutes and off the flame. The spicy potato mixture is ready. Set it aside to allow it to cool completely.
* Step 5
When the mixture has cooled, add the mashed potatoes and mix until well combined.
* Step 6
Add the chopped coriander leaves and mix well. Check the mixture to see if it forms into a ball. Divide the mixture into 12 equal portions.
* Step 7
You can make this egg chops with or without the egg yolks. Without the egg yolk, just place the spicy potato ball in the hollow part of the egg and spread it, giving it the shape of a full egg. With the egg yolk, you may place the mixture over the egg and spread it, giving it the shape of a full egg.
* Step 8
Another alternative is that you can cover the entire half egg with the spicy potato mixture.
* Step 9
Dip the prepared egg chop into the egg wash and then coat them in breadcrumbs.
* Step 10
Place these egg chops in a container and keep it refrigerated for 30-45 minutes.
* Step 11
Heat some oil in a frying pan. Place the prepared egg chops and fry on both sides until brown and crisp.
* Step 14
Delicious Egg Chops are ready to enjoy.
* Step 15
Serve these yummy egg chops as a party starter/appetizer.
