Cooking instructions
* Step 1
Wash the guavas nicely. Cut them into two halves. Cut out the black parts.
* Step 2
In an Instant Pot, add a cup of water. Place the guavas on a stand and pressure cook for 5 minutes. Allow it to cool completely. (You can cook for 5 to 6 whistles in normal pressure cooker with 300 ml of water).
* Step 3
Scoop out the centre seed part and add it to a sieve.
* Step 4
With the help of a spatula separate the pulp and seeds and set aside.
* Step 5
Transfer the fleshy part of the guavas to a blender and blend to a smooth paste, using a tablespoon of water. (Try to use very little water for grinding)
* Step 6
Pass this ground guava paste through a sieve.
* Step 7
In a non-stick pan, add the guava pulp and stir for a minute.
* Step 8
Add in the sugar and mix well.
* Step 10
Keep stirring for about 10 minutes on low flame.
* Step 11
After the set time, add lemon juice and food color and keep stirring.
* Step 12
Keep stirring till the mixture thickens and leaves the sides of the pan.
* Step 13
Add a little amount of the mixture in cold water. If it doesn’t dissolve means it is done.
* Step 14
Grease a glass tray with little ghee and set aside.
* Step 15
Add cardamom powder and crushed almonds for taste and mix until well combined. Switch off the flame.
* Step 16
Transfer the mixture to the greased glass tray and allow it to cool in room temperature for about 8 to 10 hours.
* Step 17
After the set time, cut into desired shape and size.
* Step 18
Guava Halwa is ready. Store in air tight container and enjoy this delicious melt in a mouth fudge for dessert.
