Thai 'Som Tam' Green Papaya Salad

Thai word Som means "sour" and Tam means " to pound".Lightly pounding green papaya and other ingredients with an wooden pestle just before serving coaxes out their flavors and helps to absorb the dressing but retains its crunch without turning it into a paste.This Thai Green Papaya Salad or Som Tam is an authentic and healthy summer recipe that is packed with flavor. Crisp and juicy raw papaya is finely shredded and mixed with an assortment of colourful vegetables along with herbs and tossed in a spicy, tangy dressing and topped with crunchy roasted peanuts .It makes a wonderful side dish with grilled chicken, meat, seafood or Thai curries along with sticky rice for a healthy and wholesome meal.

Cooking instructions

* Step 1

Peel papaya and remove seeds.Shred into thin long strips using a mandolin slicer.Similarly peel and shred carrot.Soak in ice cold water with ice cubes for 5 minutes just before making the salad to retain its crunchiness. Deseed and slice the capsicum and tomato.

* Step 2

Roast the peanuts in a microwave or stove top till lightly browned and crunchy. Pound 1 tbsp roasted peanuts in a mortar with a pestle. Reserve the rest for garnishing. Add the chillies and garlic in the mortar and crush them for 20 seconds. Add powdered sugar, honey or palm sugar.Also add soy sauce, tamarind paste and lime juice. Mix together.It should taste spicy, sweet, salty with a sour taste.Add salt or black salt accordingly as soya sauce is salty.

* Step 3

Strain papaya and carrot from the ice water.Squeeze excess water.Assemble the salad.Lightly pound green papaya and carrot.Add to the salad bowl.Mix sliced capsicum,tomato, sliced cucumber.Add the dressing and toss to mix well.Sprinkle lemon juice.Garnish with cilantro, few slices of cucumber and 1 tbsp roasted peanuts. Serve chilled as a side with grilled chicken, meat, seafood or Thai curries along with sticky rice and savour the flavours of an authentic and healthy Thai Raw Papaya Salad.
