Mixed Vegetables Pakoda or Fritters

Pakoda or Pakora are Indian fritters that are quick deep fried snack and normally made with chickpea flour, rice flour and other ingredients. But here it is made with flour, cornflour and egg along with mixed vegetables of choice.These Vegetable Fritters or Pakoras are crisp and delicious and can be served any day as a snack with a cup of tea or coffee.

Cooking instructions
* Step 1
Combine all the vegetables with all of the spices in a bowl.Add chilli sauce,flour, cornflour, salt to taste,baking powder and egg.Sprinkle little water if needed so that the mixture binds well. Make sure the mixture does not become too wet.
* Step 2
Heat oil in a deep frying pan or wok.Fry small spoonfuls or drop clusters of pakora mixture in 6 to 8 batches for 4 to 5 minutes on medium flame till golden brown.Remove the pakoras from oil with a slotted spoon. Drain off excess oil on a paper towel.Serve hot with Hot and Sweet Tomato Chilli Sauce.
