Dal with Pumpkin and Drumsticks is an unique traditional Bengali recipe.Pumpkin and Drumsticks combined are a powerhouse of essential nutrients like iron,vitamins and dietary fiber to name the few and combined with protein-rich pulses and aromatic spices, it is a healthy meal option and tastes delicious. This dal when served with rice or roti makes a complete meal.Here masoor dal or red lentils are used. Other than that, toor dal or split pigeon peas lentil or moong dal may also be used.

Cooking instructions
* Step 1
Peel and cube the pumpkin.Also peel and chop the drumsticks.Add 2 cups water in a pan and boil the drumsticks and pumpkin with 1/4 th tsp salt.Boil for 5 minutes under medium flame covered. Strain water and set aside.The vegetables should not lose their crunch.
* Step 2
Pressure cook dal upto 2 whistles adding the vegetable stock and 1 cup more water.Also add turmeric powder and salt to taste.Release pressure after 2 minutes.Add pumpkin and Drumsticks.Boil till perfectly cooked.Heat mustard oil in a pan and add 1 dry red chilli, kalonji, methi and radhuni.Ler it crackle.Add Kashmiri Red Chilli Powder.Saute and add this tadka over the dal.
* Step 3
Stir to mix well and boil for 2 minutes.Adjust consistency of dal by adding more water if needed. Garnish with 1 tsp ghee,dry red chilli, slit green chillies and chopped coriander. Serve hot with steamed rice or roti for a healthy and flavorful meal.
