Pumpkin Paratha

#ga24 #pumpkin #kerala Pumpkin Paratha is a nutritious and delicious flatbread made with wheat flour or other nutritious flour, pumpkin and other spices. Pumpkin puree is mixed in the flour along with spices and fresh herbs. This pumpkin puree not only enhances the nutritional value of these flatbread, but also make them flavourful and soft. Incorporating pumpkin this way is the easiest method to make the fussy eaters eat it .These pumpkin parathas taste good by itself and just needs some curd, pickle or any curry of choice as an accompaniment.

Cooking instructions

* Step 1

Peel and chop pumpkin into cubes.Heat 1 cup water in a pan and boil pumpkin for 5 minutes or till tender.Reserve stock to knead the dough.

* Step 2

Cool and grind it in a mixie to make a smooth puree.In a wide vessel, pour the wheat flour, pumpkin puree, salt, red chilli powder, turmeric powder, cumin powder,asafoetida,carom seeds, chopped green chillies and coriander leaves.Add ghee. Mix all well adding few spoons of reserved stock only if necessary to make a smooth but tight dough.Add 1 tsp oil and knead again to get a smooth surface.Cover and rest the dough for 10 minutes.

* Step 3

Make small balls out of the dough.Roll out each ball into a round paratha.Brush some oil and roll the paratha into cylindrical shape.Twist and shape into a coil.Tuck the end underneath. Roll again.Brush oil and sprinkle sesame seeds.Press lightly so that the seeds stick on the paratha.

* Step 4

Heat a tawa/ griddle. Carefully place the rolled paratha on it.Roast lightly on medium heat.Smear little oil on both sides.Press gently to ensure all parts are cooked properly. When golden spots appear on both sides take off from tawa and serve hot with curd, pickle or any curry of choice.
