Methi Chole Masala is a delicious recipe of chickpeas ( chole) cooked with flavourful fresh fenugreek ( methi) leaves.It is made in a tangy pureed tomato, yogurt,onion,ginger garlic paste and other aromatic spices.Methi is a medicinal herb and cooked with protein rich chole or kabuli chana makes it a delicious delicacy.Serve it with bhature ,naan,poori,paratha,steamed or jeera rice .

Cooking instructions
* Step 1
Pressure cook the soaked chole alongwith a cup of tea liquor,2 cups water,1 cinnamon stick,3 green cardamoms,3 cloves,1 bayleaf, 1/4 th tsp salt and 1 dry red chilli for 7-8 whistles.Let the steam release on its own.Reserve stock.
* Step 2
Make a paste of coarsely chopped onion,yogurt,ginger garlic paste.Set aside.Heat 1 tsp mustard oil and sprinkle 1/4 th tsp cumin seeds and chopped garlic. Add finely chopped methi leaves. Sprinkle 1/4 th tsp salt and pinch of sugar to taste.Saute till moisture dries up.Set aside.
* Step 3
Heat ghee and oil in a wok.Sprinkle cumin seeds and when they splutter,add grated ginger and saute.Then add chopped onion and fry till light brown. Add kashmiri red chilli powder and saute.Then add the ground paste,chana masala,coriander powder,turmeric,red chilli powder Add tomato puree,salt and sugar to taste.Fry till oil leaves sides.Coarsely mash some of chole and add both the boiled and mashed chole to the masala.Add the reserved stock and some more water if needed.
* Step 4
Boil for 5 minutes.Add the fried methi leaves and mix well.Boil for 5 minutes and sprinkle garam masala.Give it a toss and garnish with chopped coriander,fresh methi leaves and slit green chilli.
* Step 5
Methi Chole is ready.Serve hot with lemon wedges,sliced onion, green chillies as a side with bhatura,naan,poori,paratha, steamed or jeera rice.
